Happy Food

Kale Pesto

Great at this time of year. As a dip, spread on a wrap or cracker, dressing for baked fish or use to dress your favourite noodles.

Recipe

Half a bag of Kale - (I get mine from Lidl)
Clove of garlic
Juice of 1 Lemon or Lime 
30g Cashew nuts - (Lidl again)
Olive oil - add until you get the consistency you want
Good pinch of sea salt

Blitz the kale in food processor first.
Then add cashews, garlic and juice.
Finish by pouring in olive oil whilst processor is running to get desired consistency. Lastly season with salt.

You could also add chilli for a spicy version!
